I’m going to vent about venting. Not really, but venting and exhaust are holding up the final portion of our brewery build-out. Seattle Planning Dept. has taken 4 weeks to approve the plans and it will be another week or so before the exhaust hood can be installed. The part that is silly is that our Brew Kettle was designed for a direct vent but because it is over a certain wattage it has to be under a commercial kitchen hood. The hood requirement comes into play since Seattle considers it a commercial kitchen appliance. All venting aside, once the exhaust is done we can begin brewing beer. Once the beer is in kegs we should be close to opening.
